we tempered on a marble slab…video is too big to post…I’ll have to edit it. Here is a photo of the tempering machine that they use in the shop:)
we added the rest of our ingredients and many days later we have a silky smooth chocolate ready to be tempered.
well if I haven’t said it yet - thank-you Dave, Nat and the Madre staff for teaching us and letting us be in your space!! Here we are grinding the nibs - one smaller test batch and one big batch…smells so good!
We went the good old-fashioned way and peeled each bean 1 x 1 by hand!
